Our firm displayed our design and implementation of post-harvest systems using CO2
to allow harvesting persimmon fruit while they are still firm and thus allow easier handling and longer shelf life, compared to traditional processes. Our detanning process removes astringency of the fruit harvested while still firm, and is an alternative to using ethylene for treating the fruit later in the chain if harvested early.
