Event: Producing Persimmon Fruit

A Half-day seminar illustrated for over 100 participants the concepts of modern-day production, harvesting and bringing-to-market persimmon fruit.

The event hosted by the city of Naro had as its lead participant SAIM Impianti, the Covil consortium, and agronomist Vito Vitelli.

Our firm displayed our design and implementation of post-harvest systems using CO2 to allow harvesting persimmon fruit while they are still firm and thus allow easier handling and longer shelf life, compared to traditional processes. Our detanning process removes astringency of the fruit harvested while still firm, and is an alternative to using ethylene for treating the fruit later in the chain if harvested early.
